In this spirit, Marienkron introduces a new FASTING.form: vegetarian sushi fasting.

Even well-established concepts sometimes need a refresh. With its team of experts, Marienkron has developed a new fasting program that offers a unique alternative to traditional methods. The idea: refreshing summer dishes that combine the pleasures of modern cuisine with mindful reduction and a holistic retreat. Since its reopening in 2019, Marienkron has been guided by a clear philosophy: fasting means reduction – but never at the expense of good taste. With this approach, our guests enjoy refined soups, fresh herbs, and now also sushi, maki, and tea cocktails. With this newly developed sushi fasting form, Marienkron once again ensures that every bite brings enjoyment.

“Sushi fasting is more than just a trend,” explains Elke Müller, managing director of Marienkron.

“We wanted to deliberately integrate the urban lifestyle habit of eating sushi into a fasting retreat. This way, we can also appeal to and inspire younger generations. Our annual fasting survey revealed growing awareness of the positive health effects of fasting among 18–29-year-olds. With this new sushi fasting form, we aim to make fasting part of a healthy lifestyle for this younger audience,” says Müller about this innovative development at Marienkron.

Fasting tradition redefined

Our kitchen team created a balance of healthy ingredients and refined flavors. With this new addition to Marienkron’s “fasting with enjoyment” programs, the artful presentation of sushi meets the proven benefits of fasting. This program combines the classic soup and vegetable fasting of Marienkron with in-house maki and nigiri creations. Staying true to our philosophy, the sushi fasting form relies primarily on regional products – all within the alkaline fasting concept.

  • In the morning: a gentle yet flavorful lightly spiced rice soup and a fruit purée as an additional component.
  • At lunchtime: the intensive vegetable soup essence and our new Marienkron fasting sushi rolls.
  • In the evening: a clear vegetable broth with rice noodles and julienned vegetables.
  • For the refeeding phase: egg custard soup, tofu noodle soup, and rice bowls with steamed vegetables & fish.

With this varied fasting menu, guests keep a cool head and high spirits even on warm summer days. This blend of the age-old tradition of fasting with modern culinary lifestyle ensures the proven health benefits of fasting – with added enjoyment.

Dr. Ulrike Göschl, medical director at Marienkron, fasting and Kneipp physician, general practitioner and specialist in physical medicine, explains: 
“Fasting is not a diet, but an exceptional state. During the strong reduction of calories, the body shifts from sugar metabolism to fat metabolism. In this process, unnecessary or damaged cell components are broken down and recycled – a mechanism called autophagy. This self-cleansing process is the key to the success of fasting.”

She continues: “The special advantage of sushi fasting is that guests still experience the feeling of a ‘real’ meal. This makes the fasting period easier and helps reintegration into everyday life after the retreat.” Fasting, she emphasizes, is possible all year round, not just in the traditional fasting season. But while many find the thought of hot soups in summer discouraging, Marienkron now offers a refreshing alternative with sushi fasting.

“From decades of experience and scientific studies we know that fasting positively influences early metabolic disorders, joint problems and stress symptoms. The effect lasts for months beyond the fasting retreat.” With the innovation of sushi fasting, this benefit becomes part of a modern lifestyle concept that ensures lasting wellbeing.

“We are breaking with the dogmas of fasting and want to make retreats attractive for younger people as well. Fasting does not always have to mean strict endurance or absolute abstinence. That’s why we developed a concept that offers full flavor even during fasting – and a great alternative in the warm summer months. Thanks to the creativity of our kitchen team, the healthy components of sushi are highlighted so that our fasting guests can enjoy without compromising their results.”

Sushi fasting is similar in structure and calorie intake to Marienkron’s vegetable fasting, with 600–650 calories daily, enough to trigger autophagy, the body’s regenerative process. Herbal cocktails, green tea, ginger water or simply clear water support detoxification. As the program avoids animal protein, sushi fasting also provides anti-inflammatory effects – especially helpful for rheumatism patients. “Because the meals are reduced yet balanced, fasting becomes easier, and guests can also avoid the dreaded yo-yo effect afterwards. I am convinced this new approach will be highly successful,” Karner adds.

“Traditionally, sushi relies heavily on salt, sugar and alcohol for flavor. Since these are avoided during fasting, I initially doubted whether it could be both fasting-appropriate and tasty. But our kitchen team embraced the challenge and created sushi that is light, balanced and full of flavor. We reduced everything – but without compromising enjoyment.”

At Marienkron, instead of salty soy sauce, a rich reduced fasting broth is served. Homemade fermented vegetable dips add complexity, while maki fillings feature lightly poached regional vegetables to preserve nutrients and improve digestibility. “To stay true to the alkaline fasting principle while keeping the authentic sushi experience, we use beets and carrots marinated or smoked in place of fish. Whenever possible, we rely on local produce from the Seewinkel region – even organic Seewinkel rice. I am delighted with this innovative creation and eager for our guests’ feedback,” says chef Patrick Posch.

With this reinterpreted fasting concept, Marienkron aims to inspire and make the path to health-enhancing fasting both accessible and enjoyable. For a complete experience, sushi fasting can also be combined with one of our yoga retreats – offering new strength for body and mind.
