At Marienkron, food becomes an experience for all the senses – mindful, balanced, and full of flavor. Our medically guided fasting programs – from juice, soup, and vegetable fasting to innovative concepts such as vegetable-sushi fasting – support you on your path to more energy, health, and inner balance.

Wherever possible, ingredients are sourced from the Neusiedl Seewinkel region – preferably organic. For us, regionality is more than a principle – it is a lived connection.

Head Chef Patrick Posch reinterprets classic Burgenland home cooking in a vegetarian style – inspired by his expertise as a certified herb and bud educator. With his knowledge, he brings not only taste but also health benefits to the plate. In this way, healthy nutrition at Marienkron becomes a true culinary delight.

Our cuisine is predominantly vegetarian – an impulse for a mindful, healthy lifestyle. On Fridays, we also serve fish on request, and on weekends selected meat dishes – consciously reduced and of high quality.

Our nutritionists support you with tips directly in the restaurant and coordinate closely with the chefs – creating individual dishes tailored to personal preferences, intolerances, or allergies.

The ingredients come predominantly from the Neusiedl Seewinkel region – wherever possible in organic quality. Breakfast, lunch, and dinner are offered buffet-style. Guests following a fasting program will also find suitable options. Upon request, our kitchen team will prepare individual plates for you – for mindful enjoyment that works.

Healthy Nutrition. Fasting as Therapy


The right nutrition plan and fasting are essential elements at Marienkron for well-being and a healthy lifestyle. Our nutritionists are there to support you on site – with our special packages, individual stays, and regeneration days. Depending on the results of a nutritional consultation or medical discussions, specific diets or special meal plans may also be recommended. Because not only every person, but also every gut works a little differently.

Every day, our kitchen prepares a “Mild Diet” – particularly gentle and easy to digest. This is accompanied by a selection of different vegetables, side dishes such as rice, grains, and potatoes, as well as sauces, allowing you to quickly create an individual plate in line with a reduction diet. In cases of intolerances, allergies, or medically necessary dietary adjustments, the kitchen can always prepare a customized meal. All dishes and diets – including our fasting meals – are carefully coordinated between the nutritionists and the kitchen, with Head Chef Patrick Posch continuously enhancing them with flavorful ingredients for healthy enjoyment.

Soup Fasting at Marienkron 

Those who choose soup fasting at Marienkron begin the day with a grain porridge. For chewing training, a small fasting roll is also provided. At lunchtime, clear and intense vegetable soup essences and grain soups are served, while in the evening an additional vegetable-potato purée soup is offered. The soups can be refined with herbs, flaxseed oil, or spices.

Soup fasting is a liquid form of fasting with fewer calories compared to vegetable fasting. The porridge and soups gently warm you from within.

Vegetable Fasting at Marienkron

Those who choose vegetable fasting at Marienkron start the morning with a grain porridge accompanied by a fruit or herb purée and a fasting bread roll. At lunchtime, you can select from our cooked vegetable dishes, complemented by grains or potatoes and a fruit purée for dessert. In the evening, we serve our flavorful, intense clear vegetable soup along with a vegetable purée soup.

Vegetable fasting is the mildest form of fasting offered at Marienkron. It is particularly suitable for people with a more sensitive circulation.

Vegetable.SUSHI-Fasting at Marienkron

With this focus, Marienkron delights guests with our new form of fasting: Vegetable.SUSHI Fasting. The day begins with a savory rice soup and fruit purée for breakfast. At lunchtime, we serve vegetable sushi and vegetable maki with a tasty vegetable dip, and in the evening a rice noodle soup. During the build-up days, the menu is complemented with egg custard, tofu, and a rice–fish bowl. 

With this newly developed form of vegetarian sushi fasting, Marienkron once again ensures that every bite is full of flavor.

Juice Fasting at Marienkron

Guests who choose juice fasting at Marienkron receive freshly pressed fruit and/or vegetable juices twice a day, along with vegetable soups. In addition, plenty of herbal tea should be consumed. For this purpose, the Kurhaus offers tea stations where you can try out various blends.

Our physicians recommend this form of fasting to guests who already have prior fasting experience, as it is certainly the “strictest” fasting method. Whether juice fasting is particularly suitable for you will always be determined in consultation with one of our doctors.

Intermittent Fasting at Marienkron

Intermittent fasting describes the alternation between food intake and fasting phases within a specific daily rhythm. At Marienkron, you can find your own individual way into this rhythm.

For intermittent fasting, you may help yourself directly at the buffet, without calorie restriction. The specific fasting intervals are determined together with our doctors and nutritionists. In addition, our kitchen provides special meals to suit your personal rhythm outside the buffet times.
